Catering: towards a more qualitative and respectful offer
20 September 2024These results, combined with those of the working groups, were used to draw up the new specifications, in line with the needs and wishes of campus, restaurant and cafeteria users.
In addition to complying with regulations on the supply of quality/sustainable products (including organic products), Elior-Derichebourg is encouraging the purchase of local products through a short supply chain (less transport, support for the local economy) and respecting seasonality (less energy needed for production). The range of raw products (unprocessed and therefore with a smaller carbon footprint) is being expanded.
In addition, in order to highlight the quality of the products on offer and help users make their choices, Elior-Derichebourg now displays specific logos providing information on the origin of the product and/or its production method; for example: products from organic farming, fair trade products, products from sustainable fishing, etc.
Food is a major factor in the transformation towards a low-carbon society. Thanks to these initiatives, Télécom Paris and its service provider Elior-Derichebourg are continuing their efforts to improve the campus.
